Pork Milanese

Pork Cutlet – Breaded 2ea

Kosher salt 1 pinch

  1. Place the breaded pork cutlets into the fryer set at 350°F. Cook for 1-1/2 to 2 minutes or until golden brown.
  2. Remove from the fryer and place onto a small sheet tray lined with a wire rack to drain. Season with salt.

Radicchio - sliced .5oz

Arugula .25oz

Red Onions-pickled .25oz

Pepperoncini .25oz

Kosher salt Pinch

Lemon Juice TBSP

Fresh Herbs Pinch

  1. Place the radicchio, arugula, red onions, and pepperoncini into a small mixing bowl and season with salt.
  2. Drizzle the lemon Juice over the salad mix, toss to incorporate.

Bagna Cauda Aioli 1oz

Speck Smoked Prosciutto 1oz

Lemon Wedge 1ea

  1. Place pork cutlets on serving plate of choice and drizzle with aioli.
  2. Lay thinly sliced smoked prosciutto over the pork cutlets.
  3. Garnish with dressed salad and serve with lemon wedge.
